Ingredients:

2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 tsp cumin
1 tsp paprika
1 can (14 oz) crushed tomatoes
Salt and pepper, to taste
4-6 eggs
Fresh parsley, chopped (for garnish)
Crusty bread or pita, for serving


Instructions:

1. Heat olive oil in a skillet over medium heat. Add onion, garlic, and bell pepper, and sauté until softened.
2. Stir in cumin and paprika, then add crushed tomatoes. Season with salt and pepper.
3. Make wells in the sauce and crack eggs into them. Cover and cook until eggs are set to your liking.
4. Garnish with parsley and serve with crusty bread or pita.
