Ingredients: 
1 cup quinoa, rinsed
2 cups water or vegetable broth
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced (red or yellow)
1/2 red onion, finely chopped
1 cup corn (fresh, canned, or frozen)
1 cup black beans, drained and rinsed
1 ripe avocado, diced
1/4 cup fresh parsley, chopped
Salt and pepper to taste

For the Dressing:
1/4 cup olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
1 clove garlic
Salt and pepper to taste

Instructions:
1. In a pot, bring 2 cups of water or vegetable broth to a boil. Add rinsed quinoa, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Let it cool.
2. While quinoa is cooking, chop cherry tomatoes, cucumber, bell pepper, red onion, and avocado using the Arshia 10-piece Classic German Steel Knife Set.
